Banana Peanut Butter Cookies Recipe

Here's a cookie I don't feel so bad about feeding the kids; their sweetness comes not from granulated sugar, but from bananas and honey.

Banana Peanut Butter Cookies Recipe

1 cup oat flour (To make: Run some old fashioned oats through your food processor or blender until they turn to flour)
1/2 cup whole wheat or all purpose flour
1 cup unsweetened peanut butter (or other nut butter)
1 ripe banana (with black spots on the peel)
1/3 cup pure honey (or 1/3 cup granulated sugar)


1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

2. Stir together the oat flour, wheat flour, peanut butter, peeled banana, and honey. Mix until the banana is mashed into the batter and the ingredients are well combined.





3. Shape a rounded teaspoonful of dough into a ball and drop onto the baking sheet. If desired, use a fork to flatten the cookie, as with a traditional peanut butter cookie. Bake 10 to 12 minutes, or until the edges of the cookie are lightly browned. Remove from the oven and allow to cool on the baking sheet for 1 minute. Transfer the cookies to a wire rack to cool completely.

Makes about 20 cookies.
