Zucchini Spice Cookies

On Labor Day, I made these cookies for my 6 year old and her friends. They were a huge hit - but you should have seen their faces when I told them the "secret ingredient" was zucchini. One of the girls said, "I hate zucchini, but I love these cookies!"  

What You Need: 

1/2 cup butter, softened 

1 cup granulated sugar 

1 egg 

1 cup grated zucchini, pressed between two towels to help remove excess moisture 

1 cup whole wheat flour 

1 cup all purpose flour 

1 teaspoon baking soda 

1/2 teaspoon salt 

1 teaspoon cinnamon 

1/2 teaspoon cloves 

1 cup golden raisins (optional) 

Electric mixer and bowl or mixing bowl and wooden spoon 

Plastic wrap or foil 

Parchment paper

Cooling rack

 How to Do It: 

1. In the bowl of an electric mixer (or using a mixing bowl and wooden spoon), cream together the butter and sugar. 

2. Beat in the egg. Beat in the zucchini. 

3. Add the whole wheat flour, all purpose flour, baking soda, salt, cinnamon, and clove. Mix well. Fold in raisins, if using. Cover the bowl with plastic wrap or foil and refrigerate for at least 1 hour. 

 4. In the meantime, preheat the oven to 375 degrees F. Line a cookie sheet with parchment paper. 

5. Drop cookie dough by the teaspoonful onto prepared cookie sheet, placing about 1 inch apart. Bake for 8 to 10 minutes, or until set. Allow to cool on wire racks.

  2. Hope you like them! My daughter's friends came over the day after I made these and strongly hinted that they'd like more...But by then, they'd been gobbled down!
