Things to Can in Spring

Recently, a friend (writer Libery Speidel), who is new to canning, asked what she could can this spring. I looked around for a "canning by season" sort of list, but couldn't find one. So I decided to create one myself. Enjoy!
Water Bath:
* Strawberries
* Strawberries or strawberry jam/jelly
* Strawberry pie filling
* Strawberry syrup
* Rhubarb-Strawberry jam
* Rhubarb-Strawberry pie filling
* Raspberries
* Raspberry jam/jelly
* Raspberry syrup
* All other berries in season
* Pickled Asparagus
* Dandelion Jelly
* Cherries
* Cherry Ice Cream Topping
* Cherry Jam/Jelly
* Cherry pie filling
* Mint jelly
* Peaches
* Peach jam/jelly
* Peach pie filling
* Peach chutney
* Ramp pickles
* Lavender jelly
* Pickled beets
* Pickled artichoke hearts
* Pickled radishes
* Pickled cabbage
* Pickled summer squash/zucchini
Pressure Canner:
* Rhubarb
* Asparagus
* Carrots
* Greens (including dandelion greens, spinach, collards...)
* Peas
* Beets
* Mushrooms
* Potatoes
* Onions
And, available all year round for pressure canning:
* Meat, poultry, and seafood
* Beans
* Soups
* Stock

ReplyDeleteSome of these things aren't in season yet locally... I think we're just coming into strawberry season (and I don't think we'll have peaches until the summer!)
BTW, my first strawberry jam was divine... :) Never had it so good, and even hubby said it looked like my grandma's... though I think mine tastes better. ;)
It's true not everything comes into season at once. But as spring progresses, keep your eyes out for these fruits and veggies.
