Hearty "Dump It" 2-Step Meal

I'm a big believer in having a few super easy, quick, and delicious meals in your repertoire. They really save the day when you're too tired to cook and don't have anything prepared in the freezer.

Here's one I love because it's highly versatile and can be made with all shelf stable items, if necessary. As an example of it's versatility, I've used black beans, pinto beans,white beans, and lentils in this dish, as well as fresh onions (sauteed first) or onion powder. You can substitute cheese types, use frozen meat, beans, and veggies, or use use powdered milk instead of fresh. I recommend trying the recipe as written first; then feel free to experiment!

What You Need:

1 lb. ground beef, browned and drained
15 to 16 oz. corn
15 to 16 oz. can black beans
1 (10 3/4 oz.) can condensed, low sodium tomato soup
1/4 cup milk
1 teaspoon minced dried onion
1/2 teaspoon chili powder
1 cup shredded Colby cheese

Large pot
Spoon, for stirring



How to Do It:

1. Dump everything except the cheese into the pot. Stir to combine. Allow to simmer gently until heated through.

2. Add the cheese and stir until melted. Serve.
